How can I get it so that it displays the server time, instead of what seems to be some part of US local time?

For some reason, the time displaying on EventCalendar is 14:00, whilst in GEM it's set to 19:00
How can I get it so that it displays the server time, instead of what seems to be some part of US local time?
...or am I being dumb?
